Cauliflower Coleslaw

1 medium head cauliflower
1 small head cabbage
1 small onion
1 lb. bacon
2 c. Miracle Whip
3 T. sugar
1/3 c. Parmesan cheese (the grated kind in the green can)
2 T. apple cider vinegar

Cut the cauliflower into bite size pieces. Shred the cabbage. Finely chop the onion. Dice the bacon and fry until crisp then drain on paper towels.
Combine the Miracle Whip, sugar, Parmesan cheese and vinegar in a bowl. Whisk until smooth.
In a 9″ x 13″ dish, spread the cauliflower. Top with 1/4 of the dressing mix. Spread the cabbage over this and add another 1/4 of the dressing mix. Spread the onions then 1/4 of the dressing. Add the bacon and all the remaining dressing.
Cover and chill for at least 2 hours or as long as overnight. Toss before serving.
