Chicken-Bacon Skewers

1 lb. skinless boneless chicken breasts

1/2 c. apricot preserves

2 T. soy sauce

1/2 tsp. ground ginger

1/2 tsp. garlic powder

8 slices bacon

8 bamboo skewers

Cut the chicken breasts into bite-size pieces.  Combine the apricot preserves, soy sauce, ginger and garlic powder in a medium bowl.  Add the chicken pieces, tossing to coat.  Cover and chill for 30 minutes, stirring occasionally.  Soak the bamboo skewers for 30 minutes.  Remove the chicken from the marinade and place it on the skewers.  Wrap each skewer in bacon.  Grill until the bacon is cooked and the chicken is done.  Serve.
