Coconut milk pancakes

Ingredients

  • 2 c. flour
  • 2 T. sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 c. light coconut milk
  • 3 T. canola oil
  • 2 eggs

Instructions

  • Combine the flour, sugar, baking powder and salt in a large bowl.
  • Whisk together the coconut milk, canola oil and eggs. Add to the dry ingredients. Stir just enough to combine.
  • Cook as usual for pancakes.
