Marinated Cheese Cubes


  • 8 oz. extra-sharp cheddar
  • 1/3 c. extra-virgin olive oil
  • 2 T. honey
  • Fresh thyme sprigs
  • 1/2 tsp. kosher salt
  • 1/8 tsp. red pepper flakes


  • Cut the cheddar into 1/2-inch cubes. Combine the olive oil, honey, thyme sprigs, salt and red pepper flakes. Add the cheese and toss. Transfer to a small jar; cover and marinate for at least 30 minutes at room temperature.
