Napa Cabbage Salad


  • 1/2 c. sliced almonds
  • 3 T. canola oil
  • 2 T. rice vinegar
  • 1 T. soy sauce
  • 1/2 tsp. sugar
  • 1/2 tsp. freshly ground pepper
  • 1 pound Napa cabbage chopped
  • 1 diced shallot
  • 1/4 c. chopped cilantro


  • Preheat the oven to 300 degrees. Put the almonds in a pie plate. Bake for just a few minutes until lightly toasted. Let cool.
  • In a large bowl, whisk the oil, vinegar, soy sauce, sugar and ground pepper. 
  • Add the cabbage, shallot and cilantro and toss. Add the almonds and toss again right before serving.
