
1 (15 oz.) can pumpkin puree
4 eggs
1 c. vegetable oil
2/3 c. water
3 c. sugar
3 1/2 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 tsp. ground ginger
Preheat the oven to 350 degrees. Grease and flour 2 loaf pans ( 9″ x 5″).
In a large bowl, mix together pumpkin, eggs, oil, water, and sugar until well blended. In a separate bowl, whisk together the remaining ingredients, then stir the flour mixture into the pumpkin mixture until just combined. Pour into the prepared pans.
Bake for 50 minutes or until a toothpick inserted in the center of the loaves comes out clean. Cool for 10 minutes in the pans on a rack; then turn the loaves out onto the rack to cool completely.
