Veggie Hummus Roll-ups
- 1 English Cucumber
- Assorted veggies bell peppers slices, sprouts, shredded carrots
- 4 T Hummus or other spread
- Using a vegetable peeler, run lengthwise down the cucumber to creat long strips.
- Layer 2-3 long slices of cucumber on top of each other, then top with about 1 T of hummus and a couple pieces of sliced or shredded vegetables.
- Roll up like sushi to create a pinwheel.
