Veggie Hummus Roll-Ups

1 English Cucumber

Assorted veggies (bell peppers slices, sprouts, shredded carrots)

4 T Hummus or other spread

1) Using a vegetable peeler, run lengthwise down the cucumber to creat long strips.

2) Layer 2-3 long slices of cucumber on top of each other, then top with about 1 T of hummus and a couple pieces of sliced or shredded vegetables.

3) Roll up like sushi to create a pinwheel.
