Veggie Hummus Roll-ups


  • 1 English Cucumber
  • Assorted veggies bell peppers slices, sprouts, shredded carrots
  • 4 T Hummus or other spread


  • Using a vegetable peeler, run lengthwise down the cucumber to creat long strips.
  • Layer 2-3 long slices of cucumber on top of each other, then top with about 1 T of hummus and a couple pieces of sliced or shredded vegetables.
  •  Roll up like sushi to create a pinwheel.
